- 1/2 cup butter at room temperature
- 1/2 cup brown sugar packed
- 1/2 cup granulated sugar
- 1 egg
- 1 cup Peanut butter
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1/2 tsp baking soda

Instructions
- Preheat oven to 350° F (175° C).
- Cream butter and sugars. Add egg and beat well.
- Beat in peanut butter, salt and Vanilla Extract.
- Add flour and baking soda and beat until smooth.
- Roll cookies into 1" (2.5 cm) balls and place on Epicure’s parchment-lined Baking Sheets. Press flat.
- Bake for 10–12 minutes, or until lightly golden.
