Radishes can be found in abundance at the Market right now! This recipe can be used as a substitution for potatoes and pairs great with steak or fish, or even as a brunch side dish.

Instructions
  1. Preheat oven to 425 F. Prepare a baking sheet or use a cast iron skillet.
  2. Wash radishes, trim the ends and cut in half or quarter.
  3. Add radishes to the baking dish. Drizzle with olive oil. Add salt and pepper.
  4. Bake radishes for 30-40 minutes, until soft, but not watery.
  5. For the Dressing: Combine all ingredients in a small bowl and whisk to incorporate. Serve with the radishes.
