It’s summertime and it’s finally corn on the cob season! This recipe uses fresh local corn in a delicious and tangy, Mexican inspired salad perfect for your next BBQ.

corn kernels
about 4 cobs of corn

Black Beans
drained & rinsed

Cherry Tomatoes
quartered

green pepper
diced

orange pepper

red onion

Cilantro
chopped

Cotija cheese
or feta
Dressing

olive oil

lime
juiced

to taste
Instructions
Combine corn, beans, tomatoes, bell pepper and onion in a medium bowl.
Add dressing ingredients and toss to combine. Generously season with salt & pepper. Marinate at least 1 hour.
Top with feta and additional cilantro if desired.
